🍽️ Caramelized Radicchio with Oranges

Ingredients
- 2 heads radicchio
- 1 onion
- 2 unpeeled oranges
- 2 tbsp grape seed oil
- 1 tbsp honey
- 1 tsp coriander seeds
- 20 ml orange liqueur
- 1 tsp freshly chopped cilantro
- lemon juice
- 1 orange (for garnish)
Instructions
- 1. Wash the radicchio thoroughly.
- 2. Remove any wilted outer leaves.
- 3. Cut the radicchio into four equal quarters.
- 4. Leave the hard core in the center partially attached so the quarters hold together.
- 5. Peel the onion.
- 6. Slice the onion into thin rings.
- 7. Take one orange and cut it into thin wedges.
- 8. Save these wedges for decoration later.
- 9. Take the second orange.
- 10. Finely grate the orange peel (zest).
- 11. Squeeze the juice from the second orange.
- 12. Heat oil in a large pan.
- 13. Place the radicchio quarters and onion rings in the hot pan.
- 14. Cook everything slowly over medium heat.
- 15. Cook the radicchio and onion for about five minutes.
- 16. Turn the ingredients occasionally so they turn golden brown on all sides.
- 17. Pour the honey over the vegetables.
- 18. Let the honey caramelize slightly.
- 19. Sprinkle the coriander seeds over the mixture.
- 20. Deglaze the dish with the orange juice.
- 21. Also add the orange liqueur.
- 22. Let the vegetables simmer for another two to three minutes.
- 23. Finely chop the fresh coriander leaves.
- 24. Stir the coriander leaves into the vegetables.
- 25. Season the mixture with a little lemon juice.
- 26. Serve the warm dish on plates.
- 27. Garnish each plate with the prepared orange wedges.
