🍽️ Oven Pumpkin with Caramelized Glaze

Ingredients
- 1 Butternut squash
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 0.5 lemon (juice)
- 40 g walnut kernels
- 150 g vegan feta (or goat cheese)
- 1 handful pomegranate seeds
- salt
- pepper
Instructions
- 1. Wash the pumpkin thoroughly, remove the stem and pulp, halve it, and take out the seeds. Place the two halves cut-side down on a baking sheet.
- 2. Mix olive oil, balsamic vinegar, honey, and lemon juice in a small bowl to make a sauce. Pour this sauce evenly over the pumpkin halves. Bake the pumpkin in a preheated oven at 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced) for about 30 minutes, until tender.
- 3. Remove the pumpkin from the oven and sprinkle with roasted walnut kernels, crumbled feta cheese, pomegranate seeds, and a pinch of salt and pepper.
