  1. 1. Add sugar, honey, and water to a pot and let the mixture bubble vigorously for two to three minutes. Then stir in the lemon peel.
  2. 2. Pour the cream into a large pot and bring it to a boil. Pour in the caramel syrup and stir constantly until a brown mass forms. This process takes about 15 minutes.
  3. 3. Drip a few drops of the caramel mixture onto a cold plate or marble slab to check the consistency. If the mass hardens immediately, it is ready. Now stir in the butter.
  4. 4. Line a rectangular pan (approx. 20x30 cm) with aluminum foil, lightly oil the foil, and pour in the mixture. Let it cool, then turn it out onto a large board and peel off the foil. Cut squares using an oiled knife. Let the caramel candies cool completely.
