  1. 1. Put sugar, honey, and water into a pot and let the mixture bubble vigorously for 2 to 3 minutes. Then add the orange peel.
  2. 2. Pour the cream into a large pot and bring it to a boil. Pour in the caramel syrup and continue to cook the mixture while stirring constantly until a brown mass forms. This process takes about 15 minutes.
  3. 3. Do a test by dripping a few drops of the caramel mass onto a cold plate or marble slab. If the mass hardens immediately, it is ready. Now stir in the butter.
  4. 4. Line a rectangular pan (approx. 20x30 cm) with aluminum foil, grease it lightly, and pour in the mass. Let it cool, then turn it out onto a large board and peel off the foil. Cut squares using a greased knife. Let the caramel candies cool completely.
