🍽️ Homemade Capers Mayonnaise

Ingredients
- 2 fresh egg yolks (room temperature!)
- 1 pinch salt
- 1 tsp sharp mustard
- 2 tbsp lemon juice
- 200 ml germ oil
- 2 tbsp capers
- 1 tbsp chive rings
- white pepper
Instructions
- 1. Make sure all ingredients for the mayonnaise are at room temperature.
- 2. Vigorously whisk the egg yolk with a pinch of salt, mustard, and one tablespoon of lemon juice.
- 3. Whisk in a few drops of oil using a whisk or the beaters of a hand mixer.
- 4. Slowly pour in the oil in a thin stream while continuing to whisk.
- 5. Ensure the oil is immediately bound by the egg yolk until a thick, creamy mayonnaise forms.
- 6. Gently fold the capers into the finished mayonnaise.
- 7. Season the sauce to taste with salt, pepper, and a little lemon juice.
- 8. Serve the capers sauce garnished with fresh chives.
