🍽️ Marinated Rabbit Skewers with Pumpkin Seed Pesto

Ingredients
- 600 g rabbit back fillet
- 3 garlic cloves
- 1 organic orange
- 1 tsp paprika powder (rose spicy)
- 6 tbsp olive oil
- 25 g pumpkin seeds
- 6 sprigs parsley
- 1 tbsp pumpkin seed oil
- salt
- pepper
Instructions
- 1. Rinse the rabbit back fillets under running water.
- 2. Pat the fillets completely dry with a kitchen towel.
- 3. Cut the fillets lengthwise into thin strips.
- 4. Thread the meat strips decoratively onto wooden skewers.
- 5. Place the skewers in a baking dish or a shallow bowl.
- 6. Peel the garlic cloves.
- 7. Finely chop the garlic.
- 8. Wash the orange thoroughly.
- 9. Dry the orange.
- 10. Finely grate the orange zest.
- 11. Take half of the chopped garlic.
- 12. Mix this garlic with paprika powder.
- 13. Add one teaspoon of the orange zest.
- 14. Add three tablespoons of olive oil.
- 15. Stir the marinade well.
- 16. Brush the rabbit skewers with the marinade.
- 17. Cover the bowl with cling film.
- 18. Place the skewers in the refrigerator for four hours.
- 19. Let the meat marinate during this time.
- 20. Heat a pan without fat.
- 21. Roast the pumpkin seeds in the pan.
- 22. Roast them until they puff up.
- 23. Place the seeds on a plate.
- 24. Let the seeds cool down.
- 25. Finely chop the cooled pumpkin seeds.
- 26. Wash the parsley.
- 27. Shake the parsley dry.
- 28. Pluck the parsley leaves from the stems.
- 29. Finely chop the parsley leaves.
- 30. Take the remaining pumpkin seeds.
- 31. Take the remaining parsley.
- 32. Take the remaining garlic.
- 33. Add olive oil.
- 34. Add pumpkin seed oil.
- 35. Mix all ingredients for the pesto.
- 36. Season the pesto with salt.
- 37. Season the pesto with pepper.
- 38. Let the pesto infuse at room temperature.
- 39. Take the rabbit skewers out of the marinade.
- 40. Let the skewers drip dry.
- 41. Season the skewers with salt.
- 42. Heat a grill pan.
- 43. Place the rabbit skewers in the hot grill pan.
- 44. Grill the skewers all around.
- 45. Grill them for a total of six to seven minutes.
- 46. Serve the skewers with the pesto.
