🍽️ Heavenly Rabbit Stew with Vegetables

Ingredients
- 3 onions
- 2 chili peppers
- 250 g carrots
- 250 g beans
- 4 tbsp olive oil
- 2 bay leaves
- 1 sprig rosemary
- 1 rabbit (approx. 1.2 kg)
- salt
- pepper
- 2 tbsp ghee
- 3 tbsp honey
- 0.25 l red wine
- 2 tbsp parsley
Instructions
- 1. Peel the onions and chop them very finely.
- 2. Remove the stems and the inside of the chili peppers.
- 3. Cut the chili peppers lengthwise and slice them into rings.
- 4. Peel the carrots and cut them into small cubes.
- 5. Rinse the beans thoroughly.
- 6. Remove the tough ends of the beans.
- 7. Cut the beans into small pieces.
- 8. Divide the rabbit meat into eight equal pieces.
- 9. Heat ghee in a large frying pan.
- 10. Fry the rabbit pieces on all sides until well browned.
- 11. Remove the meat pieces from the pan and set them aside.
- 12. Season the meat with salt and pepper.
- 13. Heat olive oil in a large pot.
- 14. Sauté the onions in it until they are soft and translucent.
- 15. Stir the honey into the onions.
- 16. Deglaze the mixture with the wine.
- 17. Add the prepared vegetables to the pot.
- 18. Let the vegetables simmer gently for five minutes.
- 19. Season the vegetable mixture with salt and pepper.
- 20. Place the rabbit pieces back into the pot.
- 21. Add bay leaves and rosemary sprigs.
- 22. Cover the pot with a lid.
- 23. Let the stew simmer gently over medium heat for about 40 minutes.
- 24. Sprinkle the finished dish with fresh parsley.
- 25. Serve the stew hot together with ciabatta bread.
