  1. 1. Rinse the rabbit meat under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Cut the rabbit into 10 to 12 equal pieces.
  4. 4. Put 4 tablespoons of olive oil and some pepper into a small bowl.
  5. 5. Peel a garlic clove and press it using a garlic press.
  6. 6. Stir the garlic well into the oil.
  7. 7. Coat all the meat pieces with the garlic-oil mixture.
  8. 8. Remove the stems and the inside of a bell pepper.
  9. 9. Wash the bell pepper and cut it lengthwise into quarters.
  10. 10. Remove all white inner membranes from the bell pepper quarters.
  11. 11. Cut the pepper halves crosswise into thin strips.
  12. 12. Peel an onion and halve it.
  13. 13. Slice the onion into thin strips.
  14. 14. Heat the remaining olive oil in a large casserole dish.
  15. 15. Sear the rabbit pieces on all sides.
  16. 16. Add the onion strips and sweat them briefly.
  17. 17. Deglaze everything with wine.
  18. 18. Cover the pot and let the stew simmer on low heat for 40 minutes.
  19. 19. Add the pepper strips 20 minutes before the end of the cooking time.
  20. 20. Cook the peppers along with the meat.
  21. 21. Season the stew with salt and pepper to taste.
