🍽️ Aromatic Rabbit Stew with Peppers

Ingredients
- 1 rabbit (approx. 1,5 kg)
- 6 tbsp olive oil
- 4 garlic cloves
- bell peppers (1 red, 1 yellow, and 1 green)
- 1 onion
- 200 ml dry white wine
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the rabbit meat under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the rabbit into 10 to 12 equal pieces.
- 4. Put 4 tablespoons of olive oil and some pepper into a small bowl.
- 5. Peel a garlic clove and press it using a garlic press.
- 6. Stir the garlic well into the oil.
- 7. Coat all the meat pieces with the garlic-oil mixture.
- 8. Remove the stems and the inside of a bell pepper.
- 9. Wash the bell pepper and cut it lengthwise into quarters.
- 10. Remove all white inner membranes from the bell pepper quarters.
- 11. Cut the pepper halves crosswise into thin strips.
- 12. Peel an onion and halve it.
- 13. Slice the onion into thin strips.
- 14. Heat the remaining olive oil in a large casserole dish.
- 15. Sear the rabbit pieces on all sides.
- 16. Add the onion strips and sweat them briefly.
- 17. Deglaze everything with wine.
- 18. Cover the pot and let the stew simmer on low heat for 40 minutes.
- 19. Add the pepper strips 20 minutes before the end of the cooking time.
- 20. Cook the peppers along with the meat.
- 21. Season the stew with salt and pepper to taste.
