  1. 1. Peel the onion and slice it into rings. Wash the zucchini, trim the ends, and slice it as well. Wash the tomatoes and cut them into quarters. Preheat the oven to 175 degrees. Wash the rabbit pieces, pat them dry, and rub them with salt and pepper.
  2. 2. Heat 2 tablespoons of oil in a large casserole dish and brown the rabbit pieces on all sides. Add the onion, zucchini, tomatoes, olives, and capers. Peel the garlic and press it in. Season with salt and pepper, and drizzle with the remaining oil.
  3. 3. Cook the dish in the oven for 45 minutes. Add some wine in between. Stir the essential oils with the spice mix and gently fold them into the dish before serving.
