🍽️ Oven Rabbit with Colorful Vegetables

Ingredients
- 1 rabbit (kitchen-ready approx. 1,5 kg)
- 1 zucchini
- 2 red bell peppers
- 4 tomatoes
- 2 onions
- 2 garlic cloves
- salt
- pepper
- 2 tbsp olive oil
- 200 ml dry white wine
- 250 ml vegetable broth
- 2 tbsp freshly chopped parsley
Instructions
- 1. Rinse the rabbit under running water and pat it dry with a kitchen towel.
- 2. Cut the rabbit into about 8 equal pieces.
- 3. Wash the zucchini and slice it into thin rounds.
- 4. Wash the bell peppers, halve them, remove the seeds, and cut them into pieces.
- 5. Wash the tomatoes, quarter them, remove the core, and cut them into pieces.
- 6. Peel the onions and the garlic.
- 7. Cut the onions into thin strips.
- 8. Slice the garlic into thin pieces.
- 9. Preheat the oven to 160 degrees Celsius with top and bottom heat.
- 10. Season the rabbit pieces with salt and pepper.
- 11. Fry the rabbit in hot oil in a casserole dish until golden brown on all sides.
- 12. Deglaze the meat with wine.
- 13. Distribute the prepared vegetables around the meat in the casserole dish.
- 14. Season the dish again with salt and pepper.
- 15. Add some broth.
- 16. Simmer the dish in the oven for about 1 hour.
- 17. Turn the rabbit pieces occasionally during the cooking time.
- 18. Add more broth if necessary.
- 19. Take the casserole dish out of the oven.
- 20. Taste the dish and adjust the seasoning with salt and pepper.
- 21. Plate the meat with the vegetables.
- 22. Garnish the dish with parsley and serve.
