🍽️ Rabbit with grilled pears

Ingredients
- 1 rabbit (without head)
- 40 ml melted butter
- salt
- pepper (from the mill)
- 2 tbsp thyme leaves
- 2 tbsp chopped rosemary
- 3 pears
- fresh arugula leaves (for garnish)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Separate the rabbit legs from the body.
- 3. Cut the ribs off the back with kitchen shears.
- 4. Divide the rabbit back into four to five pieces.
- 5. Cut through the hind legs at the knee joint.
- 6. Brush all meat pieces with the melted butter.
- 7. Season the meat with salt and pepper.
- 8. Place the meat pieces on a baking sheet.
- 9. Sprinkle herbs over the meat.
- 10. Bake the meat in the hot oven for about 35 minutes.
- 11. Peel the pears.
- 12. Halve the pears.
- 13. Remove the core from the pear halves.
- 14. Cut the pears into wedges.
- 15. Heat a grill pan.
- 16. Fry the pear wedges on both sides.
- 17. Cook the pears until they have grill marks.
- 18. Arrange the rabbit and pears on a plate.
- 19. Garnish the dish with fresh arugula leaves.
- 20. Serve Greek yogurt as a dip alongside.
