  1. 1. Rinse the rabbit under running water and pat it dry with a kitchen towel.
  2. 2. Cut the rabbit into 8 to 10 pieces.
  3. 3. Season all meat pieces evenly with salt and pepper.
  4. 4. Strip the needles from the rosemary sprigs and chop them finely.
  5. 5. Heat oil in a large, ovenproof casserole dish.
  6. 6. Fry the rabbit pieces in batches until they are browned all over.
  7. 7. Peel the garlic and slice it thinly.
  8. 8. Add the garlic slices to the meat and fry them briefly.
  9. 9. Deglaze the dish with cognac and 300 milliliters of wine.
  10. 10. Sprinkle juniper berries and two-thirds of the chopped rosemary needles over the dish.
  11. 11. Cover the pot and braise the rabbit over low heat for 30 to 40 minutes.
  12. 12. Turn the meat pieces occasionally during cooking.
  13. 13. Add a little more wine if necessary to prevent the meat from drying out.
  14. 14. Peel the onions and chop them finely.
  15. 15. Peel the apples, quarter them, and remove the core.
  16. 16. Cut the apple flesh into bite-sized pieces.
  17. 17. Fry the onions in butter.
  18. 18. Add the apple pieces and fry them briefly.
  19. 19. Deglaze the apple and onion mixture with the remaining white wine.
  20. 20. Season the mixture with allspice, coriander, salt, and white pepper.
  21. 21. Let the apple and onion mixture simmer gently until almost all liquid has evaporated.
  22. 22. Ensure that the apples are soft.
  23. 23. Wash the tomatoes and cut them into pieces.
  24. 24. Add the tomato pieces to the rabbit in the pot.
  25. 25. Add the cooked apple and onion mixture to the rabbit as well.
  26. 26. Sprinkle the remaining chopped rosemary over the dish.
  27. 27. Place the pot in the oven and bake the dish for another 15 minutes.
