🍽️ Refreshing Melon Cold Soup with Sorbet

Ingredients
- 1 small honeydew melon
- 2 tbsp lemon juice
- 2 tbsp vanilla sugar
- 1 tbsp pine nuts
- 4 scoops lemon sorbet
- mint (for garnishing)
Instructions
- 1. Peel the melon and remove the seeds.
- 2. Cut the flesh into small cubes.
- 3. Place the melon pieces, lemon juice, and vanilla sugar into a blender.
- 4. Blend the mixture until smooth.
- 5. Pour the melon puree into individual dessert bowls.
- 6. Cover the bowls and refrigerate for at least one hour.
- 7. Heat a frying pan without oil or butter.
- 8. Toast the pine nuts in the dry pan briefly until fragrant.
- 9. Take the bowls out of the refrigerator.
- 10. Place two scoops of lemon sorbet into each bowl.
- 11. Sprinkle the toasted pine nuts over the sorbet.
- 12. Garnish the bowls with fresh lemon balm leaves.
