  3. 3. Place the melon pieces, lemon juice, and vanilla sugar into a blender.
  4. 4. Blend the mixture until smooth.
  5. 5. Pour the melon puree into individual dessert bowls.
  6. 6. Cover the bowls and refrigerate for at least one hour.
  7. 7. Heat a frying pan without oil or butter.
  8. 8. Toast the pine nuts in the dry pan briefly until fragrant.
  9. 9. Take the bowls out of the refrigerator.
  10. 10. Place two scoops of lemon sorbet into each bowl.
  11. 11. Sprinkle the toasted pine nuts over the sorbet.
  12. 12. Garnish the bowls with fresh lemon balm leaves.
