🍰 Refreshing Gooseberry Cold Soup

Ingredients
- 500 g gooseberries
- 140 g sugar
- 500 ml white wine
- 20 g cornstarch
Instructions
- 1. Wash the gooseberries thoroughly and pat them dry with a kitchen towel.
- 2. Place the gooseberries, sugar, and white wine in a pot.
- 3. Let the mixture simmer gently over low heat for about 5 minutes.
- 4. Mix the cornstarch with 2 tablespoons of cold water until you have a smooth paste.
- 5. Add the cornstarch paste to the gooseberries in the pot.
- 6. Stir constantly until the mixture comes back to a boil and thickens slightly.
- 7. Pour the warm gooseberry mixture into a glass bowl.
- 8. Let the soup cool down and then place it in the refrigerator until cold.
- 9. Serve the cold soup, for example, with lemon ice cream.
