  1. 1. Wash the gooseberries thoroughly and pat them dry with a kitchen towel.
  2. 2. Place the gooseberries, sugar, and white wine in a pot.
  3. 3. Let the mixture simmer gently over low heat for about 5 minutes.
  4. 4. Mix the cornstarch with 2 tablespoons of cold water until you have a smooth paste.
  5. 5. Add the cornstarch paste to the gooseberries in the pot.
  6. 6. Stir constantly until the mixture comes back to a boil and thickens slightly.
  7. 7. Pour the warm gooseberry mixture into a glass bowl.
  8. 8. Let the soup cool down and then place it in the refrigerator until cold.
  9. 9. Serve the cold soup, for example, with lemon ice cream.
