🍽️ Cold Roast Beef with Vinaigrette

Ingredients
- 600 g well-aged roast beef
- 1 tbsp ghee
- salt
- pepper (from the mill)
- juice of one lemon
- 6 tbsp germ oil
- salt

- 2 spring onions
- 4 radishes
- chervil (for garnish)
Instructions
- 1. Preheat the oven to 180 degrees.
- 2. Heat clarified butter in a heatproof pan.
- 3. Sear the roast beef on all sides.
- 4. Place the pan in the oven.
- 5. Roast the meat for about 15 minutes.
- 6. Remove the pan from the oven.
- 7. Season the meat with salt and pepper.
- 8. Let the meat cool down completely.
- 9. Thoroughly mix lemon juice and salt.
- 10. Stir the oil into the mixture.
- 11. Season the vinaigrette with pepper.
- 12. Wash the spring onions.
- 13. Trim the ends of the spring onions.
- 14. Slice the green parts of the spring onions into fine rings or strips.
- 15. Wash the radishes.
- 16. Trim the radishes.
- 17. Dice the radishes very finely.
- 18. Stir the spring onions and radishes into the vinaigrette.
- 19. Slice the roast beef thinly across the grain.
- 20. Arrange the meat slices on plates.
- 21. Distribute the vinaigrette over the meat.
- 22. Garnish the dish with chervil leaves.
