🍲 Refreshing Cold Spanish Tomato Soup

Ingredients
- 2 slices toast bread
- 0.5 small cucumber
- 1 onion
- 1 red bell pepper
- 3 garlic cloves
- 1 can pizza tomatoes (approx. 400 g)
- 4 tbsp olive oil
- 150 ml vegetable broth
- salt
- pepper
- chili powder
- basil (for garnish)
Instructions
- 1. Remove the crusts from the toast bread slices.
- 2. Peel the cucumber and cut it in half lengthwise.
- 3. Remove the seeds from the cucumber halves and dice the flesh into small cubes.
- 4. Peel the onion.
- 5. Remove the stems and seeds from the pepper and wash it thoroughly.
- 6. Peel the pepper into thin strips using a vegetable peeler.
- 7. Cut the peeled pepper into small pieces.
- 8. Dice the onion finely as well.
- 9. Peel the garlic cloves.
- 10. Place all prepared ingredients, except for one garlic clove, into the mixer of the food processor.
- 11. Add the pizza tomatoes.
- 12. Blend the ingredients until smooth.
- 13. Pour in 3 tablespoons of oil while blending.
- 14. Pour in the broth as well.
- 15. Continue blending until the soup has a creamy consistency.
- 16. Season the soup with salt, pepper, and chili powder.
- 17. Chill the soup in the refrigerator for at least 30 minutes.
- 18. Slice the remaining garlic clove into thin slices.
- 19. Wash the basil and shake it dry.
- 20. Pour the cold soup into 4 glasses.
- 21. Garnish the soup with the garlic slices and basil.
- 22. Serve the soup immediately.
