🍽️ Refreshing cold Spanish vegetable soup

Ingredients
- 3 slices white bread (crusts removed)
- 1 onion
- 3 garlic cloves
- 0.5 cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 800 g peeled tomatoes (1 can)
- 1 tsp ground cumin
- 1 tbsp white wine vinegar
- 4 tbsp olive oil
- salt
- pepper
- parsley (for garnish)
Instructions
- 1. Cut the white bread into coarse cubes.
- 2. Peel the onion and garlic and chop them into coarse pieces as well.
- 3. Thoroughly wash the cucumber and the bell pepper.
- 4. Cut the cucumber and bell pepper into two halves: Dice one half finely and cut the other into coarse chunks.
- 5. Place the coarse vegetable pieces, onion, garlic, peeled tomatoes, bread cubes, cumin, and vinegar into the blender.
- 6. Blend the ingredients in the mixer.
- 7. Slowly pour the oil into the mixer while blending.
- 8. Season the soup to taste with salt and pepper.
- 9. Stir the finely diced vegetable pieces into the soup.
- 10. Place the soup in the refrigerator until it is cold.
- 11. Serve the cold soup garnished with fresh parsley.
- 12. Serve roasted garlic bread as a side dish.
