🍽️ Refreshing cold melon soup

Ingredients
- 0.5 small watermelon
- 2 bell peppers (yellow)
- 0.5 cucumber
- 1 onion (red)
- 2 tbsp basil (chopped)
- 400 ml vegetable broth (jar)
- 100 ml white wine
- pepper
- chili powder
Instructions
- 1. Wash the watermelon thoroughly.
- 2. Cut the melon into 1.5 cm thick slices.
- 3. Remove the rind and seeds from the slices.
- 4. Cut the flesh into cubes.
- 5. Wash the bell peppers.
- 6. Remove the stem and seeds.
- 7. Halve the bell peppers.
- 8. Cut one quarter of the pepper into long, thin strips.
- 9. Cut the rest of the pepper into 1 to 1.5 cm cubes.
- 10. Peel the cucumber.
- 11. Cut the cucumber into small cubes.
- 12. Peel the onions.
- 13. Halve the onions.
- 14. Cut the onions into very fine cubes.
- 15. Mix all prepared ingredients in a bowl.
- 16. Add the vegetable broth.
- 17. Add the white wine.
- 18. Season the soup with pepper.
- 19. Season the soup with chili.
- 20. Taste the soup and adjust seasoning if needed.
- 21. Place the soup in the refrigerator for at least 1 hour.
- 22. Garnish the soup with the pepper strips.
- 23. Garnish the soup with fresh basil.
- 24. Serve the soup with sour cream if desired.
- 25. Alternatively, serve with unsweetened whipped cream.
