🍽️ Refreshing cold melon soup with melon balls

Ingredients
- 1 honeydew melon (á approx. 750 g)
- 1 honeydew melon (á approx. 750 g)
- 2 oranges (juiced)
- 100 g cane sugar
- 2 tsp agar-agar
- 125 ml water
- 2 tbsp orange liqueur
- 1 lemon
- 1 sprig lemon balm
Instructions
- 1. Cut the melons in half.
- 2. Remove the seeds.
- 3. Take one quarter of the melon.
- 4. Use a melon baller to scoop out nice balls from the flesh.
- 5. Peel the remaining part of the melon.
- 6. Cut the flesh into small cubes.
- 7. Place the melon cubes in a blender.
- 8. Add the cane sugar.
- 9. Pour in the orange juice.
- 10. Blend the mixture until smooth.
- 11. Squeeze the lemon to get the juice.
- 12. Heat the lemon juice together with some water.
- 13. Dissolve the agar-agar (a plant-based gelling agent) in the hot lemon liquid.
- 14. Stir the orange liqueur into the warm lemon mixture.
- 15. Mix the lemon liquid thoroughly with the melon puree.
- 16. Place the previously scooped melon balls into a cold bowl.
- 17. Put the bowl in the refrigerator.
- 18. Let the soup chill until you are ready to serve.
- 19. Pick fresh leaves from the lemon balm.
- 20. Garnish the finished soup with them.
