  1. 1. Peel the potatoes and cut them into small cubes.
  2. 2. Peel the onion and dice it into small pieces as well.
  3. 3. Peel the cucumber and cut it into small cubes.
  4. 4. Heat the butter in a pot.
  5. 5. Sauté the onions in it until they become translucent.
  6. 6. Add the potato cubes and fry them briefly.
  7. 7. Deglaze the mixture with white wine.
  8. 8. Pour in the vegetable broth.
  9. 9. Cook the potatoes until tender over medium heat.
  10. 10. Set the pot aside and let the soup cool down.
  11. 11. Mash the potatoes in the soup into a puree using a potato masher.
  12. 12. Take two-thirds of the cucumber cubes and the parsley.
  13. 13. Puree these ingredients using a hand blender.
  14. 14. Stir the puree together with the sour cream into the soup.
  15. 15. Season the soup to taste with salt and pepper.
  16. 16. Serve the cold soup.
  17. 17. Garnish it with the remaining cucumber cubes.
  18. 18. Sprinkle fresh parsley over it.
