🍽️ Refreshing Cold Potato and Cucumber Soup

Ingredients
- 3 cucumbers
- 1 onion
- 1 tbsp butter
- 125 ml white wine
- 400 ml vegetable broth
- 250 g potatoes
- 200 g whipping cream
- 2 tbsp parsley (finely chopped)
- salt
- pepper (from the mill)
Instructions
- 1. Peel the potatoes and cut them into small cubes.
- 2. Peel the onion and dice it into small pieces as well.
- 3. Peel the cucumber and cut it into small cubes.
- 4. Heat the butter in a pot.
- 5. Sauté the onions in it until they become translucent.
- 6. Add the potato cubes and fry them briefly.
- 7. Deglaze the mixture with white wine.
- 8. Pour in the vegetable broth.
- 9. Cook the potatoes until tender over medium heat.
- 10. Set the pot aside and let the soup cool down.
- 11. Mash the potatoes in the soup into a puree using a potato masher.
- 12. Take two-thirds of the cucumber cubes and the parsley.
- 13. Puree these ingredients using a hand blender.
- 14. Stir the puree together with the sour cream into the soup.
- 15. Season the soup to taste with salt and pepper.
- 16. Serve the cold soup.
- 17. Garnish it with the remaining cucumber cubes.
- 18. Sprinkle fresh parsley over it.
