🍰 Refreshing cold red currant soup with almond milk

Ingredients
- 400 ml almond drink (almond milk)
- 3 Stevia leaves
- 500 g currants (red and black)
- 2 scoops yogurt ice cream
- Honey (to taste)
Instructions
- 1. Heat the almond milk in a pot.
- 2. Add the stevia leaves to the warm milk and let them steep for about 3 minutes.
- 3. Remove the stevia leaves from the milk and discard them.
- 4. Thoroughly wash the red currants under running water.
- 5. Drain the berries and carefully remove them from the stems.
- 6. Take half of the prepared berries and add them to the warm almond milk.
- 7. Blend the mixture with a blender or hand blender until it is completely creamy and smooth.
- 8. Strain the pureed soup through a fine mesh sieve to remove any seeds or fibers.
- 9. Place the soup in the refrigerator until it has cooled down completely.
- 10. Take the cold soup out of the refrigerator and add the ice.
- 11. Blend the soup briefly until the ice has melted and the consistency is right.
- 12. Taste the soup again and sweeten it with a little honey if necessary.
- 13. Distribute the remaining fresh red currants onto the plates.
- 14. Pour the cold soup over the berries and serve immediately.
