🍽️ Refreshing cold cucumber soup with marinated cod

Ingredients
- 500 g cod fillet
- juice of one lemon
- 0.5 cucumber
- 700 g diced tomatoes (peeled and seeded)
- 3 garlic cloves
- 1 small red onion
- 3 tbsp chopped parsley
- 2 tbsp chopped mint
- 1 green bell pepper
- 1 red chili pepper
- 20 ml sherry vinegar
- 100 ml olive oil
Instructions
- 1. Rinse the cod under cold water.
- 2. Pat the fish dry with a kitchen towel.
- 3. Lightly salt the cod.
- 4. Cut the fish into thin strips.
- 5. Drizzle the fish strips with lemon juice.
- 6. Mix the fish thoroughly with the juice.
- 7. Cover the bowl.
- 8. Let the fish marinate in a cool place for about one hour.
- 9. Wash the cucumber thoroughly.
- 10. Peel the cucumber completely.
- 11. Halve the cucumber lengthwise.
- 12. Remove the inside with the seeds.
- 13. Cut the cucumber flesh into small cubes.
- 14. Puree the removed cucumber skin and seeds finely.
- 15. Set the cucumber puree aside.
- 16. Take about half of the tomatoes.
- 17. Puree these tomatoes finely.
- 18. Set the tomato puree aside as well.
- 19. Wash the bell pepper.
- 20. Peel the bell pepper with a vegetable peeler.
- 21. Halve the peeled pepper.
- 22. Remove the seeds from the pepper.
- 23. Cut the pepper into small cubes.
- 24. Peel the onion.
- 25. Cut the onion into fine cubes.
- 26. Wash the chili pepper.
- 27. Remove the seeds from the chili.
- 28. Finely chop the chili.
- 29. Peel the garlic.
- 30. Finely chop the garlic.
- 31. Mix the garlic with the onions.
- 32. Add the chopped chili to the mixture.
- 33. Add the vinegar to the mixture.
- 34. Mix the onion-chili-vinegar mixture well.
- 35. Add the diced cucumber to a large bowl.
- 36. Add the remaining tomato pieces to the cucumber.
- 37. Add the diced pepper.
- 38. Stir the cucumber puree into the vegetables.
- 39. Stir the tomato puree into the mixture.
- 40. Stir the vinegar mixture into the soup.
- 41. Add the oil.
- 42. Stir everything well.
- 43. Season the soup with salt.
- 44. Season the soup with pepper.
- 45. Fold the herbs into the soup.
- 46. Taste the soup to finish seasoning.
- 47. Place the soup in the refrigerator for one hour.
- 48. Take the marinated cod out of the marinade.
- 49. Mix the cod with the cold soup.
- 50. Serve the soup in glasses.
