🍽️ Refreshing cold cucumber buttermilk soup with avocado

Ingredients
- 1 avocado
- 1 cucumber
- 2 tbsp peanuts
- 1 tsp honey
- 1 tbsp lime juice
- 5 ice cubes
- 600 ml buttermilk
- salt
- cayenne pepper
- paprika powder
Instructions
- 1. Peel the avocado, cut it in half and remove the pit.
- 2. Cut the avocado into small cubes.
- 3. Peel the cucumber and cut it lengthwise into two halves.
- 4. Scoop out the seeds from the cucumber halves with a spoon.
- 5. Cut the deseeded cucumber pieces into cubes as well.
- 6. Rinse the coriander under running water.
- 7. Shake the coriander dry.
- 8. Pluck the fresh coriander leaves from the stems.
- 9. Save a few nice leaves for decoration.
- 10. Place the avocado cubes, cucumber pieces, roasted peanuts, honey, lime juice, and some ice cubes into the blender.
- 11. Pour a small amount of buttermilk into the blender.
- 12. Blend the ingredients with the blender until a creamy mixture forms.
- 13. Add more buttermilk gradually until the soup reaches the desired consistency.
- 14. Season the soup with salt and cayenne pepper to taste.
- 15. Pour the cold soup into individual glasses.
- 16. Garnish the soup with the reserved coriander leaves.
- 17. Sprinkle some paprika powder over the soup.
- 18. Serve the soup immediately while cold.
