🍽️ Refreshing cold cucumber soup

Ingredients
- 2 cucumbers (à 300 g)
- 1 white onion
- 0.5 l chicken broth
- 150 g crème fraîche
- salt
- pepper (from the mill)
- 0.5 red bell pepper (in small cubes)
- mint
Instructions
- 1. Peel the cucumbers and cut the flesh into small cubes.
- 2. Set aside a few of these cubes to use as decoration later.
- 3. Peel the onion and cut it into small cubes as well.
- 4. Place the remaining cucumber cubes and onion cubes into a blender.
- 5. Blend the vegetables into a smooth puree.
- 6. Stir the warm chicken broth into the vegetable puree.
- 7. Add the crème fraîche and mix everything well.
- 8. Season the soup with salt and pepper to your liking.
- 9. Place the soup in the refrigerator until it is completely chilled.
- 10. Add the previously set-aside cucumber cubes and bell pepper cubes to the cold soup.
- 11. Garnish the bowl with fresh mint leaves before serving the soup.
