  1. 1. Peel the cucumbers and cut the flesh into small cubes.
  2. 2. Set aside a few of these cubes to use as decoration later.
  3. 3. Peel the onion and cut it into small cubes as well.
  4. 4. Place the remaining cucumber cubes and onion cubes into a blender.
  5. 5. Blend the vegetables into a smooth puree.
  6. 6. Stir the warm chicken broth into the vegetable puree.
  7. 7. Add the crème fraîche and mix everything well.
  8. 8. Season the soup with salt and pepper to your liking.
  9. 9. Place the soup in the refrigerator until it is completely chilled.
  10. 10. Add the previously set-aside cucumber cubes and bell pepper cubes to the cold soup.
  11. 11. Garnish the bowl with fresh mint leaves before serving the soup.
