🍽️ Refreshing cold cucumber soup

Ingredients
- 1 kg cucumber
- 200 g yogurt
- 250 g whipping cream
- 2 garlic cloves
- 2 tbsp lemon juice
- 250 g shrimp (in brine)
- 2 bunch dill
- salt
- pepper (from the mill)
Instructions
- 1. Peel the cucumbers, trim off the hard ends, cut them in half lengthwise, and scoop out the seeds with a spoon. Cut the flesh into rough chunks.
- 2. Peel the garlic and puree it together with the cucumber chunks until smooth. Stir in the yogurt, cream, lemon juice, salt, and pepper. Cover the bowl and refrigerate for two hours to chill thoroughly.
- 3. Wash the dill and pick the leaves off the stems. Save a few nice sprigs for garnish and finely chop the rest. Stir the chopped dill into the cold soup.
- 4. Drain the shrimp well. Ladle the cold soup onto soup plates. Garnish with the shrimp and the reserved dill sprigs, and serve the dish ice-cold.
