🍽️ Refreshing cold cucumber cream soup

Ingredients
- 1 cucumber (approx. 400 g)
- 250 g quark (or cream cheese)
- 300 ml yogurt
- salt
- 2 tbsp lemon juice
- 3 tbsp dill tips (chopped)
- 15 clover flowers
Instructions
- 1. Wash the cucumber thoroughly under running water.
- 2. Grate the cucumber finely.
- 3. Sprinkle the grated cucumbers with a pinch of salt.
- 4. Let the salted cucumbers sit for about 15 minutes to release their liquid.
- 5. Mix the cucumbers in a bowl with quark, yogurt, two tablespoons of chopped dill, and lemon juice.
- 6. Place the finished soup in the refrigerator until it is completely cold.
- 7. Garnish the cold soup with fresh clover flowers and dill before serving.
