  1. 1. Peel the cucumbers and cut them in half lengthwise.
  2. 2. Remove the seeds and cut the flesh into small cubes.
  3. 3. Pluck the mint leaves from the stems.
  4. 4. Set aside a few nice leaves for garnishing.
  5. 5. Add the remaining mint, the cucumber cubes, the crème fraîche, and the ice cubes to the blender.
  6. 6. Blend the ingredients into a smooth puree.
  7. 7. While blending, slowly pour in milk (or a little water).
  8. 8. Adjust until you reach the desired creamy consistency.
  9. 9. Season the soup with salt, lemon juice, horseradish, and pepper.
  10. 10. Pour the soup into small glasses.
  11. 11. Garnish with the reserved mint leaves.
  12. 12. Serve the cold soup immediately.
