🍲 Refreshing cold cucumber-mint soup

Ingredients
- 2 cucumbers
- 2 sprigs mint
- 50 g crème fraîche
- 1 handful ice cubes
- 100 ml milk
- salt
- lemon juice
- horseradish (jar)
- pepper (from the mill)
Instructions
- 1. Peel the cucumbers and cut them in half lengthwise.
- 2. Remove the seeds and cut the flesh into small cubes.
- 3. Pluck the mint leaves from the stems.
- 4. Set aside a few nice leaves for garnishing.
- 5. Add the remaining mint, the cucumber cubes, the crème fraîche, and the ice cubes to the blender.
- 6. Blend the ingredients into a smooth puree.
- 7. While blending, slowly pour in milk (or a little water).
- 8. Adjust until you reach the desired creamy consistency.
- 9. Season the soup with salt, lemon juice, horseradish, and pepper.
- 10. Pour the soup into small glasses.
- 11. Garnish with the reserved mint leaves.
- 12. Serve the cold soup immediately.
