🍽️ Refreshing cold vegetable soup

Ingredients
- 1 egg yolk
- 1 tsp hot mustard
- 60 ml olive oil
- salt
- pepper
- 2 beef tomatoes
- 1 cucumber
- 1 red bell pepper
- 1 garlic clove
- 1 pinch cayenne pepper

Instructions
- 1. Whisk the egg yolk with the mustard. Slowly add the olive oil while stirring constantly until a creamy mayonnaise forms. Season the mayonnaise with salt and pepper.
- 2. Wash the tomatoes, remove the stem ends, and finely dice the tomatoes. Peel the cucumber and dice it as well. Quarter the bell pepper, remove the seeds, rinse it, and dice it finely. Peel the garlic and dice it finely.
- 3. Place the vegetable cubes, garlic, and mayonnaise in a blender and puree until smooth. Strain the soup through a fine sieve to ensure a smooth texture. Season with salt, pepper, and cayenne pepper. Chill the soup in the refrigerator until cold.
- 4. Cut the chives into fine rings. Ladle the cold soup into bowls, sprinkle with the chives, and serve with hot bread.
