🍲 Refreshing Cold Strawberry Cucumber Soup

Ingredients
- 100 g watermelon
- 300 g strawberries
- 0.5 cucumber
- 1 onion
- 300 g plain yogurt (3.8 % fat)
- 0.5 organic lemon (juice)
- salt
- pepper (from the mill)
- 1 tsp honey
- mint (for garnish)
Instructions
- 1. Remove the seeds from the watermelon.
- 2. Dice the watermelon flesh into small cubes.
- 3. Wash the strawberries thoroughly.
- 4. Remove the green stems and leaves from the strawberries.
- 5. Cut the strawberries into wedges.
- 6. Set aside four tablespoons of the cut strawberries.
- 7. Peel the cucumber completely.
- 8. Dice the peeled cucumber.
- 9. Peel the onion.
- 10. Finely chop the onion.
- 11. Rinse the lemon under hot water.
- 12. Dry the lemon with a cloth.
- 13. Grate the lemon peel to get the zest.
- 14. Squeeze the juice from the lemon.
- 15. Place the fruit and vegetables into a blender.
- 16. Pour in the lemon juice.
- 17. Add the yogurt.
- 18. Blend the mixture until smooth and fine.
- 19. Season the soup with salt.
- 20. Season the soup with pepper.
- 21. Add the lemon zest.
- 22. Add the honey.
- 23. Mix everything well to combine the flavors.
- 24. Place the soup in the refrigerator for at least one hour.
- 25. Fill the cold soup into glasses.
- 26. Garnish the soup with the reserved strawberries.
- 27. Garnish the soup with mint.
- 28. Serve the soup immediately.
