🍽️ Refreshing cold avocado soup

Ingredients
- 3 avocados
- 800 ml meat broth (from the jar)
- 0.125 l white wine
- 100 g crème fraîche
- 1 tbsp lemon juice
- 1 red bell pepper
- cilantro
Instructions
- 1. Cut the avocado in half and carefully remove the pit.
- 2. Cut the soft flesh into bite-sized pieces.
- 3. Place the avocado pieces in the blender along with the white wine and lemon juice.
- 4. Blend the mixture until smooth.
- 5. Bring the meat broth to a boil in a pot.
- 6. Immediately remove the pot with the broth from the heat.
- 7. Stir the avocado mixture into the hot broth until well combined.
- 8. Gently fold in the crème fraîche.
- 9. Season the soup with salt and pepper.
- 10. Place the bowl in the refrigerator for half an hour to chill the soup thoroughly.
- 11. Wash the bell pepper, remove the stem and seeds.
- 12. Halve the bell pepper and cut it into small diamond shapes.
- 13. Ladle the cold avocado soup onto plates.
- 14. Garnish the soup with the bell pepper diamonds and fresh coriander.
- 15. Serve the soup.
