  1. 1. Cut the avocado in half and carefully remove the pit.
  2. 2. Cut the soft flesh into bite-sized pieces.
  3. 3. Place the avocado pieces in the blender along with the white wine and lemon juice.
  4. 4. Blend the mixture until smooth.
  5. 5. Bring the meat broth to a boil in a pot.
  6. 6. Immediately remove the pot with the broth from the heat.
  7. 7. Stir the avocado mixture into the hot broth until well combined.
  8. 8. Gently fold in the crème fraîche.
  9. 9. Season the soup with salt and pepper.
  10. 10. Place the bowl in the refrigerator for half an hour to chill the soup thoroughly.
  11. 11. Wash the bell pepper, remove the stem and seeds.
  12. 12. Halve the bell pepper and cut it into small diamond shapes.
  13. 13. Ladle the cold avocado soup onto plates.
  14. 14. Garnish the soup with the bell pepper diamonds and fresh coriander.
  15. 15. Serve the soup.
