  2. 2. Cut the flesh into bite-sized cubes.
  3. 3. Reserve a few cubes for garnish.
  4. 4. Drizzle the reserved cubes with a little lemon juice to prevent browning.
  5. 5. Puree the remaining avocado with the white wine and a splash of lemon juice in a blender until smooth.
  6. 6. Slice the mint into thin strips.
  7. 7. Cube the bread.
  8. 8. Toast the bread cubes in oil in a pan until crispy.
  9. 9. Bring the meat broth to a boil in a pot.
  10. 10. Remove the pot from the heat.
  11. 11. Whisk the avocado puree into the hot broth until well combined.
  12. 12. Stir in the Creme Fraiche, salt, and pepper.
  13. 13. Place the soup in the refrigerator for half an hour to chill thoroughly.
  14. 14. Serve the soup in the shells or bowls.
  15. 15. Garnish the soup with the avocado pieces, mint, and toasted bread cubes.
