🍽️ Refreshing cold avocado soup

Ingredients
- 2 avocados
- 0.75 l meat broth (from the jar)
- 0.125 l white wine
- 150 g crème fraîche
- 2 tsp lemon juice
- 2 slices toast bread
- 1 tbsp olive oil
- salt
- pepper
- fresh mint
Instructions
- 1. Cut the avocado in half and remove the pit.
- 2. Cut the flesh into bite-sized cubes.
- 3. Reserve a few cubes for garnish.
- 4. Drizzle the reserved cubes with a little lemon juice to prevent browning.
- 5. Puree the remaining avocado with the white wine and a splash of lemon juice in a blender until smooth.
- 6. Slice the mint into thin strips.
- 7. Cube the bread.
- 8. Toast the bread cubes in oil in a pan until crispy.
- 9. Bring the meat broth to a boil in a pot.
- 10. Remove the pot from the heat.
- 11. Whisk the avocado puree into the hot broth until well combined.
- 12. Stir in the Creme Fraiche, salt, and pepper.
- 13. Place the soup in the refrigerator for half an hour to chill thoroughly.
- 14. Serve the soup in the shells or bowls.
- 15. Garnish the soup with the avocado pieces, mint, and toasted bread cubes.
