  1. 1. Melt the sugar in a large pot until it caramelizes.
  2. 2. Deglaze with the apricots and their juice, then bring the mixture to a boil.
  3. 3. Stir in the lemon juice and sweeten to taste with vanilla sugar.
  4. 4. Puree the soup until smooth.
  5. 5. Let it cool down and place it in the refrigerator for at least two hours.
  6. 6. Bring the milk to a boil together with the salt, butter, and sugar in a pot.
  7. 7. Add the semolina and stir constantly until the mixture thickens and forms a solid dough ball.
  8. 8. Remove the pot from the heat and wait briefly.
  9. 9. Stir in the first egg.
  10. 10. Let the mixture cool down slightly before stirring in the second egg.
  11. 11. Then let the dough rest and cool for about ten minutes.
  12. 12. Using two spoons, shape small dumplings from the dough.
  13. 13. Boil them in simmering water for four to five minutes until cooked through.
  14. 14. Lift the dumplings out of the water with a slotted spoon and let them cool.
  15. 15. Divide the cold soup among four plates.
  16. 16. Decorate with swirls of yogurt and place the cooled dumplings on top.
  17. 17. Dust everything with powdered sugar and serve.
  18. 18. Garnish with fresh raspberries if desired.
