🍰 Light Apple Tart with Quark Base

Ingredients
- 1250 g Apples
- 1 Lemon (organic)
- 1 tsp Cinnamon
- 1 tbsp Maple syrup
- 180 g Low-fat quark
- 1 Egg (size M)
- 4 tbsp Rapeseed oil
- 100 ml Milk (3.5% fat)
- 0.5 tsp Vanilla powder
- 300 g Spelt wholemeal flour
- 1 packet Baking powder
- 50 g Raw cane sugar
- 1 pinch Salt
Instructions
- 1. Peel the apples.
- 2. Cut the apples into quarters.
- 3. Remove the core from the apple pieces.
- 4. Slice the apple pieces into thin wedges.
- 5. Rinse the lemon under hot water.
- 6. Dry the lemon.
- 7. Finely grate the lemon zest.
- 8. Squeeze the juice from the lemon.
- 9. Place the apple wedges in a bowl.
- 10. Add two tablespoons of lemon juice.
- 11. Add one tablespoon of lemon zest.
- 12. Add cinnamon.
- 13. Add maple syrup.
- 14. Mix everything well in the bowl.
- 15. Whisk low-fat quark, egg, oil, milk, and vanilla powder vigorously with a whisk.
- 16. Add flour, baking powder, sugar, and salt to the quark mixture.
- 17. Knead the dough briefly just until it comes together.
- 18. Roll out the dough flat.
- 19. Place the dough on a baking sheet lined with baking paper.
- 20. Arrange the apple wedges in rows on the dough.
- 21. Preheat the oven to 180 degrees Celsius conventional heat (fan: 160 degrees Celsius; gas: level 2 to 3).
- 22. Bake the cake for 35 to 40 minutes until golden brown.
