🍽️ Veal rolls with ribbon noodles and green beans

Ingredients
- 100 g green beans
- salt
- 4 thin veal cutlets (approx. 120 g each)
- 4 slices Parma ham
- 8 sage leaves
- pepper (freshly ground)
- 2 tbsp olive oil
- 125 ml dry white wine
- 150 ml veal stock
- 2 tbsp crème fraîche
- 1 tbsp mustard
- 1 tbsp parsley (coarsely chopped)
- 300 g ribbon noodles
- 2 tbsp butter
Instructions
- 1. Wash the green beans thoroughly.
- 2. Remove the hard ends and any strings from the beans.
- 3. Bring a pot of salted water to a boil.
- 4. Add the beans to the boiling water.
- 5. Cook the beans for about 8 minutes until they are tender-crisp.
- 6. Drain the beans.
- 7. Rinse the beans immediately with cold water to stop the cooking process.
- 8. Let the beans drain well.
- 9. Pound the veal cutlets slightly flatter if necessary.
- 10. Top each cutlet with ham.
- 11. Place sage leaves on the ham.
- 12. Distribute the prepared green beans over the meat.
- 13. Season the filling with freshly ground pepper.
- 14. Roll up the cutlets tightly.
- 15. Secure the rolls with toothpicks.
- 16. Heat oil in a large pan.
- 17. Fry the rolls until golden brown on all sides.
- 18. Deglaze the rolls with wine.
- 19. Add the meat stock.
- 20. Bring the liquid to a boil.
- 21. Reduce the heat to medium.
- 22. Cover the pan.
- 23. Simmer the rolls for about 8 minutes.
- 24. Bring a large pot of salted water to a boil.
- 25. Cook the ribbon noodles according to package instructions until tender-crisp.
- 26. Remove the cooked veal rolls from the sauce.
- 27. Stir Creme Fraiche into the sauce.
- 28. Stir mustard into the sauce.
- 29. Let the sauce simmer briefly.
- 30. Season the sauce with salt and pepper.
- 31. Remove the toothpicks from the rolls.
- 32. Place the rolls back into the sauce.
- 33. Sprinkle chopped parsley over the rolls.
- 34. Melt butter in a separate pan.
- 35. Pour the drained noodles into the hot butter.
- 36. Toss the noodles briefly in the butter.
- 37. Warm the plates.
- 38. Place the veal rolls with sauce on the plates.
- 39. Serve with the noodles.
