  9. 9. Wash the spinach thoroughly.
  10. 10. Spin the spinach dry.
  11. 11. Rinse the veal cutlets briefly.
  12. 12. Pat the cutlets dry with a kitchen towel.
  13. 13. Place the cutlets on your work surface.
  14. 14. Tenderize the cutlets slightly if necessary.
  15. 15. Lightly salt and pepper both sides of the cutlets.
