🍽️ Veal Roll-Ups with Creamy Mashed Potatoes

Ingredients
- 600 g floury cooking potatoes
- 500 g green beans
- salt
- 60 g butter
- nutmeg
- pepper (from the mill)
- 1 handful baby spinach
- 4 veal cutlets (kitchen-ready approx. 150 g)

- 4 slices goat butter cheese
- 150 g tomato bell pepper (in a jar)
- 2 tbsp olive oil
- 150 ml dry white wine
- 150 ml veal stock
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Place the potatoes in a pot with salted water.
- 3. Cover the pot and cook the potatoes for about 30 minutes until tender.
- 4. Wash the beans and remove the tough ends.
- 5. Bring salted water to a boil.
- 6. Add the beans to the boiling water and blanch them for about 8 minutes until al dente.
- 7. Drain the beans and rinse them immediately with cold water to stop the cooking process.
- 8. Let the beans drain well.
- 9. Wash the spinach thoroughly.
- 10. Spin the spinach dry.
- 11. Rinse the veal cutlets briefly.
- 12. Pat the cutlets dry with a kitchen towel.
- 13. Place the cutlets on your work surface.
- 14. Tenderize the cutlets slightly if necessary.
- 15. Lightly salt and pepper both sides of the cutlets.
- 16. Place one slice of cheese on each cutlet.
- 17. Drain the peppers.
- 18. Let the peppers drain well.
- 19. Distribute the spinach and peppers evenly over the cheese.
- 20. Roll up the cutlets tightly.
- 21. Secure the rolls with toothpicks or trussing needles.
- 22. Heat oil in a pan.
- 23. Fry the rolls on all sides for 3 to 4 minutes until golden brown.
- 24. Deglaze the rolls with wine.
- 25. Add the meat stock.
- 26. Reduce the heat to medium.
- 27. Place the lid slightly ajar on the pan.
- 28. Simmer the rolls for 15 to 20 minutes.
- 29. Drain the cooked potatoes.
- 30. Melt 40 grams of butter.
- 31. Mash the potatoes with the melted butter.
- 32. Season the mashed potatoes with salt and nutmeg.
- 33. Keep the mash warm.
- 34. Melt the remaining butter in a pan.
- 35. Toss the beans in the butter until they are warm.
- 36. Season the beans with salt.
- 37. Plate the rolls with the beans and mashed potatoes.
- 38. Grind fresh pepper over the dish.
- 39. Serve the meal immediately.
