🍽️ Tender Veal Liver with Creamy Mashed Potatoes

Ingredients
- 500 g veal liver (sliced)
- 2 tart apples
- 4 onions
- 1 tbsp lemon juice
- 2 tbsp flour
- salt
- pepper
- 4 tbsp butter
- 650 g floury potatoes
- 150 g whipping cream
- 40 g butter
- salt
- pepper
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into bite-sized pieces.
- 3. Bring water to a boil and add some salt.
- 4. Cook the potato pieces in the salted water for about 25 minutes.
- 5. Drain the water.
- 6. Mash the potatoes into a smooth puree.
- 7. Stir in the hot cream and the butter into the puree.
- 8. Season the puree with salt and pepper to taste.
- 9. Keep the puree warm until you are ready to serve.
- 10. Rinse the veal liver under running water.
- 11. Pat the liver dry with a kitchen towel.
- 12. Carefully remove all visible membranes from the liver.
- 13. Peel the apples.
- 14. Core the apples.
- 15. Peel the onions.
- 16. Slice the onions into thin rings.
- 17. Cut the apples into rings about 8 millimeters thick.
- 18. Drizzle the apple rings with lemon juice.
- 19. Preheat the oven to 75 degrees.
- 20. Mix the flour with salt and pepper in a shallow dish.
- 21. Coat the liver slices in the seasoned flour mixture.
- 22. Heat 2 tablespoons of butter in a frying pan.
- 23. Fry the liver slices for 3 minutes on each side.
- 24. Remove the fried liver slices from the pan.
- 25. Place the liver in the preheated oven to keep it warm.
- 26. Add the remaining butter to the same pan.
- 27. Fry the apple rings until golden brown on both sides.
- 28. Place the fried apple rings on top of the warm liver slices.
- 29. Fry the onion slices in the remaining butter.
- 30. Spread the fried onions over the apple rings.
- 31. Serve the liver with the onions, apple rings, and mashed potatoes.
