  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into bite-sized pieces.
  3. 3. Bring water to a boil and add some salt.
  4. 4. Cook the potato pieces in the salted water for about 25 minutes.
  5. 5. Drain the water.
  6. 6. Mash the potatoes into a smooth puree.
  7. 7. Stir in the hot cream and the butter into the puree.
  8. 8. Season the puree with salt and pepper to taste.
  9. 9. Keep the puree warm until you are ready to serve.
  10. 10. Rinse the veal liver under running water.
  11. 11. Pat the liver dry with a kitchen towel.
  12. 12. Carefully remove all visible membranes from the liver.
  13. 13. Peel the apples.
  14. 14. Core the apples.
  15. 15. Peel the onions.
  16. 16. Slice the onions into thin rings.
  17. 17. Cut the apples into rings about 8 millimeters thick.
  18. 18. Drizzle the apple rings with lemon juice.
  19. 19. Preheat the oven to 75 degrees.
  20. 20. Mix the flour with salt and pepper in a shallow dish.
  21. 21. Coat the liver slices in the seasoned flour mixture.
  22. 22. Heat 2 tablespoons of butter in a frying pan.
  23. 23. Fry the liver slices for 3 minutes on each side.
  24. 24. Remove the fried liver slices from the pan.
  25. 25. Place the liver in the preheated oven to keep it warm.
  26. 26. Add the remaining butter to the same pan.
  27. 27. Fry the apple rings until golden brown on both sides.
  28. 28. Place the fried apple rings on top of the warm liver slices.
  29. 29. Fry the onion slices in the remaining butter.
  30. 30. Spread the fried onions over the apple rings.
  31. 31. Serve the liver with the onions, apple rings, and mashed potatoes.
