🍽️ Veal Skewers with Melon Chutney

Ingredients
- 375 g cantaloupe melon
- 200 g watermelon
- 20 g ginger root
- 2 garlic cloves
- 50 ml apple cider vinegar
- 75 ml apple juice
- 0.1 g saffron threads (1 box)
- salt
- pepper
- 50 g jam sugar 3:1
- 600 g veal loin (boneless)
- 1 red chili pepper
- 1 lime
- 2 tbsp mustard seeds
- 6 tbsp olive oil
- 100 g lamb's lettuce
- 4 tortilla wraps
Instructions
- 1. Peel the melon and remove the seeds.
- 2. Use a melon baller to scoop out small balls from the flesh.
- 3. Peel the ginger and one clove of garlic.
- 4. Finely chop the ginger and the garlic clove.
- 5. Pour apple cider vinegar and apple juice into a pot.
- 6. Bring the liquid to a boil.
- 7. Add the melon balls, chopped ginger, chopped garlic, and saffron threads to the pot.
- 8. Season the mixture with salt and pepper.
- 9. Simmer the chutney over low heat for about 25 minutes without a lid.
- 10. Stir in the jam sugar.
- 11. Let the chutney boil vigorously for another 5 minutes.
- 12. Fill the hot chutney into well-rinsed twist-off jars.
- 13. Seal the jars tightly.
- 14. Pat the veal dry with kitchen paper.
- 15. Cut the meat into thin strips.
- 16. Thread the meat strips onto 12 wooden skewers.
- 17. Wash the chili pepper.
- 18. Remove the seeds and the inside of the chili.
- 19. Cut the chili into thin strips.
- 20. Squeeze the lime to extract the juice.
- 21. Peel the remaining garlic.
- 22. Slice the garlic into thin rounds.
- 23. Mix the chili strips, mustard seeds, olive oil, lime juice, salt, and pepper in a bowl.
- 24. Add the sliced garlic and chili strips to the marinade.
- 25. Place the meat skewers into the marinade.
- 26. Let the skewers marinate for about 1 hour.
- 27. Preheat your grill.
- 28. Cook the skewers on the hot grill for about 10 minutes.
- 29. Turn the skewers while grilling.
- 30. Wash the salad greens.
- 31. Spin the salad dry.
- 32. Warm the tortilla wraps on the hot grill.
- 33. Cut each wrap into four quarters.
- 34. Take 6 plates.
- 35. Place some chutney on each plate.
- 36. Place 2 skewers on each plate.
- 37. Add a few leaves of lamb's lettuce.
- 38. Place a tortilla quarter on the plate.
