  1. 1. Peel the persimmons, wash them, and slice the flesh into very thin strips. Toast the pecans briefly in a pan, chop them finely, and mix them with the oats, almond butter, one tablespoon of honey, and cinnamon. Grate the chocolate finely.
  2. 2. Whisk the skyr with the remaining honey, the grated orange peel, and the orange juice. Gently fold the grated chocolate into the skyr cream.
  3. 3. Fill about one-third of the cream into four glasses. Distribute one-third of the pecan mixture evenly on top and place one-third of the persimmon strips over it. Repeat the layers with the remaining ingredients until everything is used up, and serve the trifle.
