🍳 Kaki Coconut Skyr

Ingredients
- 1 persimmon (alternatively Sharon fruit)
- 150 g Skyr
- 3 tbsp coconut milk (45 g)
- 1 handful cashew nuts (25 g)
- 1 tsp flaxseeds (ground)
Instructions
- 1. Wash the persimmon, peel it, and dice the flesh. Stir the skyr (a thick, low-fat dairy product) with the coconut milk until smooth and transfer the mixture into a bowl.
- 2. Roughly chop the cashew nuts. Scatter the persimmon cubes and cashews over the skyr and top with flaxseeds. Enjoy!
