🍽️ Chocolate Coconut Macaroons

Ingredients
- 0.5 vanilla pod
- 2 egg whites
- 1 pinch salt
- 30 g honey (2 tbsp)
- 80 g coconut flakes
- 40 g ground almonds (3 tbsp)
- 15 g cocoa powder (approx. 3 level tbsp; highly defatted)
- 16 wafers
Instructions
- 1. Cut the vanilla pod in half lengthwise.
- 2. Scrape out the vanilla seeds with a knife.
- 3. Whip the egg whites and salt stiffly with a hand mixer.
- 4. Stir the honey and vanilla seeds into the egg white mixture.
- 5. Add the coconut flakes, ground almonds, and cocoa powder.
- 6. Gently fold the ingredients in with a spatula.
- 7. Place about one teaspoon of the coconut mixture onto each wafer.
- 8. Place the wafers on a baking sheet lined with baking paper.
- 9. Preheat the oven to 160 degrees Celsius with fan.
- 10. Bake the macaroons for 10 to 12 minutes.
- 11. Let the macaroons cool down completely afterwards.
