🍽️ Fluffy Kaiserschmarrn with Caramelized Pear Slices

Ingredients
- 2 Eggs
- 50 g delicate oat flakes (5 Tbsp)
- 60 g spelt wholemeal flour (4 Tbsp)
- 30 g maple syrup (2 Tbsp)
- 1 pinch salt
- 100 ml milk (3.5% fat)
- 1 pear
- 3 Tbsp apple juice
- 1 star anise
- 1 cinnamon stick
- 30 g butter (2 Tbsp)
- 1 pinch cinnamon
Instructions
- 1. Separate the eggs. Place the egg yolks in a bowl.
- 2. Add the oats, flour, one tablespoon of maple syrup, a pinch of salt, and the milk to the egg yolks.
- 3. Stir the ingredients well until you have a smooth mixture.
- 4. Let the batter rest for ten minutes so the oats can swell.
- 5. Wash the pear and cut it in half lengthwise.
- 6. Remove the core from the pear halves.
- 7. Cut the pears into thin slices.
- 8. Place the pear slices in a small saucepan.
- 9. Add the apple juice, the remaining maple syrup, the star anise, and the cinnamon.
- 10. Bring the mixture to a boil once.
- 11. Remove the pot from the heat and set the pears aside.
- 12. Whip the egg whites until they form stiff peaks.
- 13. Gently fold the whipped egg whites into the egg yolk mixture.
- 14. Heat one tablespoon of butter in a frying pan.
- 15. Pour the batter into the hot pan.
- 16. Fry the pancake over low to medium heat for about five minutes.
- 17. Carefully turn the dough flap.
- 18. Fry the other side for another five minutes until golden brown.
- 19. Divide the cooked dough flap into small pieces using two spatulas.
- 20. Add the remaining butter to the pan.
- 21. Sprinkle some cinnamon over the dough pieces.
- 22. Fry the pieces for another two to three minutes, turning them occasionally.
- 23. Serve the Kaiserschmarrn together with the prepared pear slices.
