  1. 1. Separate the eggs. Place the egg yolks in a bowl.
  2. 2. Add the oats, flour, one tablespoon of maple syrup, a pinch of salt, and the milk to the egg yolks.
  3. 3. Stir the ingredients well until you have a smooth mixture.
  4. 4. Let the batter rest for ten minutes so the oats can swell.
  5. 5. Wash the pear and cut it in half lengthwise.
  6. 6. Remove the core from the pear halves.
  7. 7. Cut the pears into thin slices.
  8. 8. Place the pear slices in a small saucepan.
  9. 9. Add the apple juice, the remaining maple syrup, the star anise, and the cinnamon.
  10. 10. Bring the mixture to a boil once.
  11. 11. Remove the pot from the heat and set the pears aside.
  12. 12. Whip the egg whites until they form stiff peaks.
  13. 13. Gently fold the whipped egg whites into the egg yolk mixture.
  14. 14. Heat one tablespoon of butter in a frying pan.
  15. 15. Pour the batter into the hot pan.
  16. 16. Fry the pancake over low to medium heat for about five minutes.
  17. 17. Carefully turn the dough flap.
  18. 18. Fry the other side for another five minutes until golden brown.
  19. 19. Divide the cooked dough flap into small pieces using two spatulas.
  20. 20. Add the remaining butter to the pan.
  21. 21. Sprinkle some cinnamon over the dough pieces.
  22. 22. Fry the pieces for another two to three minutes, turning them occasionally.
  23. 23. Serve the Kaiserschmarrn together with the prepared pear slices.
