🍳 Crispy Kaiserschmarrn

Ingredients
- 4 Eggs
- 4 tbsp Demerara sugar
- 1 pinch Salt
- 1 tsp Lemon juice
- 1 small grating Lemon zest
- 150 ml Milk
- 8 tbsp Flour
- 2 tbsp Butter
- 100 g Raisins
- Icing sugar (for dusting)
- Lemon balm (for garnish)
Instructions
- 1. Preheat the oven to 100 degrees (80 degrees for fan-assisted or gas mark 1).
- 2. Carefully separate the eggs so that the egg whites and yolks end up in separate bowls.
- 3. Whisk the egg whites together with a pinch of salt and a splash of lemon juice until stiff peaks form.
- 4. Whisk the egg yolks with half of the sugar, the lemon zest, and the milk until smooth.
- 5. Put the flour in a large bowl and gradually stir in the egg yolk and milk mixture.
- 6. Gently fold the stiffly beaten egg whites into the batter until evenly combined.
- 7. Melt half of the butter in a large pan and pour in half of the batter.
- 8. Fry the batter over low heat for about 5 minutes until it is set.
- 9. Flip the pancake onto the other side using a plate and fry it briefly.
- 10. Tear the pancake into small, irregular pieces using a fork or wooden spoon.
- 11. Add half of the raisins to the dough pieces and stir them briefly.
- 12. Place the Kaiserschmarrn pieces on a plate and put them in the oven to keep warm.
- 13. Repeat the process with the remaining butter and the rest of the batter.
- 14. Serve the finished Kaiserschmarrn on plates and dust it generously with powdered sugar.
- 15. Garnish the dish with fresh lemon balm and serve immediately.
