Ingredients
- 130 g flour
- 2 tbsp sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 6 eggs
- 250 ml milk
- 2 tbsp raisins
- 20 ml rum
- clarified butter (for baking)
- 1 tbsp powdered sugar (for dusting)
Instructions
- 1. Separate the eggs. Carefully lift the yolks away from the whites.
- 2. Put flour, a pinch of salt, powdered sugar, regular sugar, and the egg yolks into a bowl.
- 3. Stir the ingredients vigorously until a smooth batter forms.
- 4. Let the batter rest for 30 minutes.
- 5. Put the raisins into the rum.
- 6. Whip the egg whites into stiff peaks.
- 7. Stir the batter well again.
- 8. Gently fold in the egg whites.
- 9. Mix the egg whites from the bottom up.
- 10. Melt butter in a large, oven-safe pan.
- 11. Pour the batter into the hot pan.
- 12. Bake the batter into a thick pancake.
- 13. Flip the pancake once.
- 14. Finish baking the pancake.
- 15. Tear the finished pancake into small pieces.
- 16. Add the soaked raisins.
- 17. Sprinkle everything with powdered sugar.
- 18. Place the pan in the hot oven.
- 19. Bake until the surface caramelizes.
- 20. Bake until the surface is slightly brown.
- 21. Dust the Kaiserschmarrn with powdered sugar before serving.
