🍰 Lighter Kaiserschmarren with Quark

Ingredients
- 20 g sultanas
- 50 ml apple juice
- 3 eggs
- 1 vanilla pod
- 150 g low-fat quark
- 100 g wheat flour Type 1050
- 75 ml milk (1.5% fat)
- 25 g coconut blossom sugar
- 25 g butter
Instructions
- 1. Put the raisins and apple juice into a small pot.
- 2. Bring the mixture to a boil.
- 3. Remove the pot from the heat.
- 4. Let the raisin mixture cool down.
- 5. Separate the eggs.
- 6. Slice the vanilla pod lengthwise.
- 7. Scrape the vanilla seeds out of the pod.
- 8. Whisk the egg yolks with the vanilla seeds.
- 9. Add the low-fat quark to the egg yolk mixture.
- 10. Add the flour.
- 11. Add the milk.
- 12. Add the coconut blossom sugar.
- 13. Stir everything well until a smooth mixture forms.
- 14. Beat the egg whites with the beaters of the hand mixer.
- 15. Beat the egg whites until very stiff.
- 16. Gently fold the egg whites into the quark mixture.
- 17. Melt the butter in a large non-stick pan.
- 18. Make sure the pan is oven-safe.
- 19. Let the butter foam.
- 20. Pour the batter into the hot pan.
- 21. Let the batter set briefly over medium heat.
- 22. Drain the cooled raisins.
- 23. Sprinkle the raisins over the batter.
- 24. Preheat the oven.
- 25. Set the oven to 200 degrees Celsius conventional heat.
- 26. Alternatively, set the oven to 180 degrees Celsius fan-forced heat.
- 27. Alternatively, set the oven to gas mark 3.
- 28. Place the pan in the oven.
- 29. Bake the Kaiserschmarren for about 15 to 20 minutes.
- 30. Remove the finished Kaiserschmarren from the oven.
- 31. Tear the Kaiserschmarren into pieces using two forks.
- 32. Place the pieces onto plates.
- 33. Serve the Kaiserschmarren.
