🍽️ Crispy Kaiserschmarrn with Apple Compote

Ingredients
- 130 g flour
- 2 tbsp sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 6 eggs
- 250 ml milk
- 2 tbsp raisins
- 20 ml rum
- ghee (for baking)
- 1 tbsp powdered sugar
- powdered sugar (for dusting)
- 4 tart apples
- lemon juice
- 100 g sugar
- 200 ml water
- 1 vanilla pod
Instructions
- 1. Peel the apples and remove the core.
- 2. Cut the flesh into strips about 1 cm wide.
- 3. Cut the strips in half crosswise.
- 4. Drizzle the apple strips with lemon juice immediately to prevent browning.
- 5. Place the apples, water, sugar, and vanilla pod in a pot.
- 6. Simmer the mixture for about 10 minutes until the apples are tender but still firm.
- 7. Allow the compote to cool completely.
- 8. Separate the eggs, carefully dividing the yolks from the whites.
- 9. Whisk flour, salt, powdered sugar, sugar, and egg yolks together in a bowl.
- 10. Let the batter rest and swell for 30 minutes.
- 11. Soak the raisins in rum.
- 12. Beat the egg whites until they form stiff peaks.
- 13. Stir the batter thoroughly again after the resting period.
- 14. Gently fold the egg whites into the batter.
- 15. Heat butter in a large, oven-safe pan.
- 16. Pour the batter into the hot pan and bake a thick pancake.
- 17. Flip the pancake once.
- 18. Finish baking the pancake on the other side.
- 19. Tear the finished pancake into small, irregular pieces.
- 20. Add the rum-soaked raisins to the dough pieces.
- 21. Sprinkle everything with powdered sugar.
- 22. Place the pan in the hot oven.
- 23. Caramelize the pancake pieces in the oven until golden brown.
- 24. Dust the finished Kaiserschmarrn with powdered sugar again before serving.
- 25. Serve the pancake pieces together with the cooled apple compote.
