  6. 6. Simmer the mixture for about 10 minutes until the apples are tender but still firm.
  7. 7. Allow the compote to cool completely.
  8. 8. Separate the eggs, carefully dividing the yolks from the whites.
  9. 9. Whisk flour, salt, powdered sugar, sugar, and egg yolks together in a bowl.
  10. 10. Let the batter rest and swell for 30 minutes.
  11. 11. Soak the raisins in rum.
