  1. 1. Separate the egg. Carefully lift the yolk away from the white.
  2. 2. Place a bowl over a pot of hot water (bain-marie).
  3. 3. Add the egg yolk, coffee, liqueur, and sugar to the bowl.
  4. 4. Whisk the mixture with a mixer until creamy and smooth.
  5. 5. Remove the bowl from the heat source.
  6. 6. Continue whisking until the mixture is completely cooled down.
  7. 7. Whip 100 milliliters of cream until stiff.
  8. 8. Gently fold the whipped cream into the egg mixture.
  9. 9. Whip the egg white until stiff as well.
  10. 10. Gently fold the whipped egg white into the mixture.
  11. 11. Fill the ice cream mixture into four freezer-safe glasses.
  12. 12. Cover the glasses.
  13. 13. Place the glasses in the refrigerator to freeze for at least 4 hours.
  14. 14. Take the glasses out of the freezer about 10 minutes before serving.
  15. 15. Whip the remaining cream with vanilla sugar until stiff.
  16. 16. Place a dollop of cream on each parfait.
  17. 17. Dust the dessert with cinnamon and cardamom.
  18. 18. Serve the parfait immediately.
