  1. 1. Preheat the oven.
  2. 2. Take half of the cream and add the sage leaves.
  3. 3. Bring the mixture to a boil on the stove.
  4. 4. Let it simmer on low heat for about 5 minutes.
  5. 5. Remove the pan from the heat and let the mixture cool down.
  6. 6. Separate the eggs by separating the yolk from the white.
  7. 7. Whip the egg whites until they form stiff peaks.
  8. 8. Place the whipped egg whites in the cold.
  9. 9. Whisk the egg yolks with sugar over a hot water bath until creamy.
  10. 10. Pour the warm sage cream slowly into the egg yolks.
  11. 11. Stir the mixture well.
  12. 12. Add the coffee and the cognac.
  13. 13. Mix everything well together.
  14. 14. Stir the cream over a cold water bath until it is completely cooled down.
  15. 15. Whip the remaining cream until stiff.
  16. 16. Fold the whipped cream into the cooled cream.
  17. 17. Fold the cold egg whites into the cream.
  18. 18. Fill the cream into a metal bowl.
  19. 19. Cover the bowl.
  20. 20. Freeze the parfait in the freezer compartment for about 3 hours.
  21. 21. Scoop out balls from the frozen parfait.
  22. 22. Place the parfait balls on the plates.
  23. 23. Wash the orange thoroughly with hot water.
  24. 24. Dry the orange.
  25. 25. Grate the orange peel finely.
  26. 26. Peel the orange all around with a sharp knife.
  27. 27. Cut out the fillets between the membranes.
  28. 28. Garnish the parfait with the orange zest.
  29. 29. Garnish the parfait with a sage leaf.
  30. 30. Garnish the parfait with coffee.
  31. 31. Serve the parfait together with the orange fillets.
