🥤 Classic Coffee and Sage Parfait

Ingredients
- 300 ml whipping cream
- 2 sprigs sage
- 2 eggs
- 100 g sugar
- 70 ml strong hot coffee
- 10 ml cognac
- 1 untreated orange
- 4 leaves sage
- 4 tbsp cold coffee
Instructions
- 1. Preheat the oven.
- 2. Take half of the cream and add the sage leaves.
- 3. Bring the mixture to a boil on the stove.
- 4. Let it simmer on low heat for about 5 minutes.
- 5. Remove the pan from the heat and let the mixture cool down.
- 6. Separate the eggs by separating the yolk from the white.
- 7. Whip the egg whites until they form stiff peaks.
- 8. Place the whipped egg whites in the cold.
- 9. Whisk the egg yolks with sugar over a hot water bath until creamy.
- 10. Pour the warm sage cream slowly into the egg yolks.
- 11. Stir the mixture well.
- 12. Add the coffee and the cognac.
- 13. Mix everything well together.
- 14. Stir the cream over a cold water bath until it is completely cooled down.
- 15. Whip the remaining cream until stiff.
- 16. Fold the whipped cream into the cooled cream.
- 17. Fold the cold egg whites into the cream.
- 18. Fill the cream into a metal bowl.
- 19. Cover the bowl.
- 20. Freeze the parfait in the freezer compartment for about 3 hours.
- 21. Scoop out balls from the frozen parfait.
- 22. Place the parfait balls on the plates.
- 23. Wash the orange thoroughly with hot water.
- 24. Dry the orange.
- 25. Grate the orange peel finely.
- 26. Peel the orange all around with a sharp knife.
- 27. Cut out the fillets between the membranes.
- 28. Garnish the parfait with the orange zest.
- 29. Garnish the parfait with a sage leaf.
- 30. Garnish the parfait with coffee.
- 31. Serve the parfait together with the orange fillets.
