🥤 Refreshing Frozen Coffee Granita

Ingredients
- 0.25 l strong, hot Mocha (or Espresso)
- 80 g Sugar
- 1 Vanilla pod
- 100 g Whipping cream
Instructions
- 1. Put 70 grams of sugar and 250 milliliters of water into a pot.
- 2. Warm the mixture until the sugar has completely dissolved.
- 3. Bring the liquid to a boil.
- 4. Let the mixture bubble vigorously for one minute.
- 5. Stir the Mokka (strong espresso) into the hot sugar solution.
- 6. Slice a vanilla pod lengthwise.
- 7. Scrape out the small seeds from the pod.
- 8. Add the empty pod and the seeds to the coffee mixture.
- 9. Let the mixture cool down completely.
- 10. Strain the cooled liquid through a fine sieve.
- 11. Pour the liquid into a shallow metal tray.
- 12. Place the tray in the freezer for two hours.
- 13. Take the tray out after 30 minutes.
- 14. Stir the mixture vigorously with a fork.
- 15. Repeat this process every 30 minutes.
- 16. Perform the final stirring at the end of the two hours.
- 17. Add the remaining sugar to the cream.
- 18. Whip the cream with the sugar until it is half stiff.
- 19. Divide the frozen coffee mixture among several glasses.
- 20. Add a dollop of the whipped cream to each glass.
