  1. 1. Soak the gelatin in a bowl of cold water.
  2. 2. Slice the vanilla pod lengthwise.
  3. 3. Add the vanilla pod and the coffee to a pot.
  4. 4. Bring the mixture to a boil once.
  5. 5. Remove the pot from the heat.
  6. 6. Remove the vanilla pod from the liquid.
  7. 7. Whisk the egg yolks with the sugar until frothy.
  8. 8. Stir in six tablespoons of the hot coffee into the egg yolk mixture.
  9. 9. Slowly stir the egg yolk mixture into the remaining coffee.
  10. 10. Place the pot back on the stove over low heat.
  11. 11. Stir continuously until the cream thickens.
  12. 12. Do not let the cream boil.
  13. 13. Remove the pot from the heat immediately if necessary.
  14. 14. Squeeze the soaked gelatin well.
  15. 15. Add the dripping wet gelatin to the hot cream.
  16. 16. Stir until the gelatin has completely dissolved.
  17. 17. Place the cream in a bowl of cold water.
  18. 18. Let the cream cool and set.
  19. 19. Whip the cream until stiff.
  20. 20. Place the whipped cream on top of the cooled cream.
  21. 21. Dust the dessert with cocoa powder.
  22. 22. Garnish with chopped chocolate shaped like espresso beans.
