  1. 1. Place a pot with water on the stove and bring it to a boil.
  2. 2. Whip 150 g of cream until stiff and place it in the refrigerator to cool.
  3. 3. Gently warm 50 g of cream.
  4. 4. Put the egg yolks, sugar, and vanilla sugar into a metal bowl.
  5. 5. Place the metal bowl over the pot with the hot water (bain-marie).
  6. 6. Whip the egg yolk mixture until creamy over the hot water.
  7. 7. Add the warm cream to the cream in the hot water bath gradually.
  8. 8. Fold the warm cream into the cream mixture.
  9. 9. Remove the bowl from the pot.
  10. 10. Continue whipping the cream until it has cooled down.
  11. 11. Gently fold the cold, stiffly whipped cream into the coffee cream.
  12. 12. Fill the coffee cream into two large espresso cups.
  13. 13. Place the cups in the freezer compartment for about four hours.
  14. 14. Dust the parfait with powdered sugar shortly before serving.
  15. 15. Then dust it with cocoa powder.
  16. 16. Let the parfait thaw for about five minutes.
  17. 17. Decorate it with coffee beans.
